Cooking advice on why fish fall apart.

What the heck am I doing wrong?  I get the oil to a perfect temperature for the first fish that goes in the skillet.  Do you turn the temperature to high, med or low or do you change from high to low when you add the first fish? Also, I dry the fish before putting it in, why does it fall apart? Matter of fact, they ALL fall apart when I am cooking them. I’ve tried fresh, fozen, saltwater, and all fail. Cooks what am I doing wrong?
